Strawberry Poppyseed Salad

What you will need

Staple Pantry Items 

Extra Virgin Olive Oil 
Canola Oil
Red Wine Vinegar
White Granulated Sugar 
Candied Pecans

Refrigerator Items

Pre-Washed Spring Mix 
Fresh Strawberries
Fresh Blueberries
Fresh Oranges or Tangerines

Kitchen Equipment 

Blender 
Mixing Bowl

Recipe

Dressing

1 Cup Red Wine Vinegar 
1 Cup Extra Virgin Olive Oil
1 1/2 Cups of Canola Oil
1/2 Cup of Sugar
1 1/2 Cups of Fresh Strawberries
4 Tablespoons of Poppy Seeds

Salad 

Spring Mix 
Fresh Strawberries 
Fresh Blueberries
Fresh Oranges or Tangerines 
Candied Pecans

Instructions

Before you begin

Wash all produce.

Dressing

Place the following ingredients into your blender;

1 Cup Red Wine Vinegar 
1 Cup Extra Virgin Olive Oil
1 1/2 Cups of Canola Oil
1/2 Cup of Sugar
1 1/2 Cups of Fresh Strawberries
4 Tablespoons of Poppy Seeds

Blend dressing for ~2 minutes 

Assemble the Salad!

Grab your mixing bowl, add the desired amount of Spring Mix and Dressing together. Mix lightly with salad tongs or a spoon. 

Add the desired amount of each of the following;

Fresh Strawberries 
Fresh Blueberries
Fresh Oranges or Tangerines 
Candied Pecans

Toss ingredients together, and you’re ready to serve! 

I’ll usually add half the Strawberries, Blueberries, Oranges, and Candied Pecans when I mix the Salad. Then after I put the Salad in a serving bowl, I will garnish the top with the other half of those ingredients. I also add ingredients in the order listed because the colors look the best and contrast as you stack them. 

Make it your own! 

I usually serve this as a Side Salad or Starter Salad, but it can quickly become a go-to Entree Salad with just a few additions! 

 Add Quinoa  

The carbohydrates from all the fruit will give you an immediate boost of energy, but adding complex carbohydrates with Quinoa will provide you with sustained energy throughout your afternoon or evening. Plus, you should already have some made from Kale Salad

Add Chicken 

Add some chicken for added protein to satiate your entire body. 

Add Black Beans

I always love the texture of Black Beans and Fresh Fruit in a Salad. Plus, this is an excellent way for Vegetarians to load up on protein.  

Replace Fresh Blueberries for Frozen

Adding Frozen Blueberries will contrast how flavors feel in your mouth. Give it a try to see if you like it! 

Add Salad Toppings Mix

I keep this Salad Mix at home for when I eat. It’s effortless to add last minute in a lot of meals. The seeds provide fatty acids and vitamins, while the Dried Crasians add great texture.
